Dehydration is the oldest form of food storage and preserves more nutrition in the processing that than any other form of food preservation. Water-pack canning transfers vitamins and minerals from the food to the water, and often the canned food is mushy and has an unappetizing color. Be sure to get 90% of the moisture out of your dehydrated food for long-time storage. I have had raisins and banana chips for 15 years in my home storage, and they are still delicious. Just remember to keep them air-tight so that moisture won't get back into the food. Simply follow the instructions in the How To Dry Foods Cookbook which is included at no charge.
